Crumble muffin

Crumble topping:
cake flour 30g
almond meal 30g
brown sugar 30g
unsalted butter 30g

Mixed all above using finger tip. Remember to use the cold butter and put in fridge to prepare muffin batter

Muffin batter
cake flour 185g
baking powder 1tsp
salt 1/4 tsp
whole egg 2pcs
unsalted butter 80g
sugar 135g
sour cream 150g
coffee powder mix with hot water 30ml

Mix the soften butter with sugar. Add in 2 eggs separately. Then sour cream, sift in flour, BP and salt using the spatula. Mix all well and pour in the coffee mixture.

Scoop the batter into the muffin cup and sprinkle the crumble on top. Bake in the oven 170C about 25min. Cool in rack before serve.
