Steam Durian Tapioca Kueh

Ingredient
500gram grated Tapioca
300gram Durian
120gram sugar
65ml coconut milk
200ml water
2-3 drops of yellow Colouring (optional)

For rolling/topping
Half grated coconut
A pinch of Salt

Method
1) Mix tapioca, durian, sugar, coconut milk, water and yellow colouring in a mixing bowl
2) Grease the pan and pour the mixture in and steam for 1hr or until cooked
3) Remove and leave to cool completely
4) In the mean time, steam grated coconut with salt for 5-10min. Leave to cool completely
5) Cut the tapioca cake and coat in cooled grated coconut and serve.
