Soybean milk is a healthy alternative to cow's milk. Main source of proteins for vegens. And it super easy to make at home. Learned to make this when I was 13.
- 1 3/4 cups dried soybeans
2 quarts water
1 pandan leaf
1/2 cup caster sugar
- Soak beans overnight in water. Drain, rinse, and discard water. Combine soaked beans with 2 quarts fresh water. In a food processor or blender, process beans with water until smooth.
- Pour into a pot through a double layer of cheesecloth, or a fine sieve. Add pandan leaf and sugar to taste. Boil soy milk for 15 minutes. Stir frequently to prevent skin from forming. Stir in sugar to taste.
- Enjoy it hot or cold.
