Orange Fruit cake

    1 cup Raisins
    60g margarine
    ¾ cup caster sugar
    1 teaspoon vanilla essence
    4 x egg whites
    1 ½ cups self raising flour
    grated rind and juice of 2 oranges
  1. Cream the margarine, sugar and vanilla essence together until light and fluffy. Add the egg whites one at a time and beat well after each addition.
  2. Add the flour, orange rind and juice and raisins and stir well. Pour the mixture into a greased and lined 20cm round tin and bake for 1 hour at 180°C.
  3. Decorate cake with chopped lemon and orange rind, or ice as desired.
