Tofu whip with kiwifruit & melon syrup

Ingredients: (serves 4)
    300g silken tofu, drained
    300ml thickened cream
    2 tsp vanilla extract
    1/4 cup (40g) pure icing sugar
    4 kiwifruit, peeled and sliced, reserve 1 kiwifruit to decorate
    1/4 cup (60g) caster sugar
    1/4 cup (60ml) melon liqueur
    Mint leaves to decorate
Directions:
  1. Using an electric beater, beat tofu, cream, vanilla extract and icing sugar together until thick and fluffy. Cover and refrigerate.

  2. In a blender place 3 kiwifruit, caster sugar and liqueur. Blend until smooth. Pour mixture through a fine sieve and discard pulp.

  3. To serve, spoon tofu whip into individual serving dishes and drizzle with syrup. Decorate with remaining kiwifruit and mint leaves.
